It's always best to thoroughly chill the mixture before processing. If you don't, it can take a little longer than 20 minutes with some recipes. It can be consumed immediately after processing but I always put in the freezer to harden completely. It creates an amazingly smooth product. Excellent machine. One of my best purchases ever. You will not regret it.
