I can only answer this with my experiences on a PC (but intel apple has identical PC hardware): ssd with sata should work on any device with sata connector, only that it's max speed be hampered by the max data bandwidth. The 2007 model is likely sata version 1 which is about 150 mb/s. The sata 2 is 300 and 3 is 600mb/s. However, one still gain massive benefit with fast operation in the ssd itself. A 256 gb version is recommended just incase you need more storage.

Looks like the iMac uses a 3.5" drive, this is 2.5". So an adapter would be necessary - or lots of duct tape :-). There are lots of 2.5-3.5 adapters on amazon. As to which one works best in the iMac I'll leave to your further googling. In addition, taking apart an iMac is no simple matter. You have to remove the display panel to get to the HD.
